Autoimmune disorders are becoming more and more common. Many of our lives have been affected by one (or more). But why is it that these have become so prevalent, and why are our bodies attacking themselves? During this talk, Dr. Otken will explore the mechanisms behind autoimmunity, why we're seeing it more often, how we can minimize the damage and ways we can reduce the development of further autoimmune response.

In this presentation, Amy Davis, RD, LDN (Education Coordinator at Swerve Sweetener) will discuss the pros and cons of many popular diets/lifestyles, including gluten-free, vegan, keto, paleo/whole30 and intuitive eating. Amy will give an in-depth overview of these and provide suggestions to help you figure out which way of eating is right for YOU, so that you can find your own individual happy, healthy lifestyle.

Eliminating gluten and the Top 8 allergens from your diet can be tricky, especially when it comes to cooking and baking your favorite recipes! Come listen as expert chefs Joel Schaefer (who was the Manager of Product Development & Special Diets for Walt Disney World Resort) and Mary Schaefer (former pastry chef at Disney’s Contemporary Resort in Orlando, FL) discuss ways to swap out ingredients in order to create memorable recipes for your family that are both safe and delicious. Their company, Your Allergy Chefs, is devoted to providing tips, guidance and resources for those with food allergies or intolerances.

For those with gluten sensitivity or celiac disease, being gluten free impacts not only health, but virtually all aspects of life including budget, travel, cooking and social life. Join Cynthia Kupper, RD from the Gluten Intolerance Group (GIG), for insights on how to optimize your gluten-free life. Learn about what to eat, what to avoid, and how to tell the difference. Plus, she will share strategies for maximizing nutrition while minimizing cost, avoiding gluten cross-contact at home and in restaurants, and how you can benefit from social support.

You will learn how to heal yourself from the inside out by focusing on food and lifestyle choices. Healthy intestines are the key to a healthy, happy life!

Does the thought of traveling seem daunting and overwhelming? It doesn't have to be! Come join Laura Copper, a local food & travel blogger, as she discusses simple ways to travel confidently and eat safely even with dietary restrictions. She will cover: how and what to prepare ahead of time, must-haves while traveling and finding safe food while traveling. Her family has traveled around the world from Africa to camping a few hours away, and everywhere in between. She is here to say it all can be done with joy and confidence, so let’s navigate your desire to travel together!
