Diagnosed with gluten intolerance more than 20 years ago, Carol Kicinski has motivated millions to live happy gluten- and allergen-free lives. Carol is the founder and editor-in-chief of Simply Gluten Free magazine, a nationally published magazine dedicated to the gluten and allergen-free lifestyle. She launched the first magazine in November/December 2012 and it has since become the best-selling gluten- and allergen-free lifestyle magazine in America and Canada. Carol is the author of four print cookbooks and twenty eBooks, including the best-selling books Simply Gluten-Free Desserts (St. Martin’s Press, 2011), Simply Gluten-Free Quick Meals (St. Martin’s Press, 2012), and Simply Gluten Free 5 Ingredient Cookbook (Topix Media Lab, 2016). Her recipes and articles have been published in more than 650 newspapers and magazines across the country. Carol’s simplest passion is making “gluten-free recipes that are not just ‘good for gluten-free’ but just plain good, period!”
