Joel is the founder and program developer of Your Allergy Chefs, a consulting firm that supports the consumer and foodservice professionals with resources and the knowledge, skills, and abilities to create great meals that are safe for people with food allergies, intolerances, and special diets which include plant-based, vegetarian, and vegan. Previous experience includes Manager of Culinary Product Development and Standards for Princess Cruises and Manager of Product Development & Special Diets for Walt Disney World Resort. Joel also authored Serving People with Food Allergies Kitchen Management and Menu Creations. Joel has been cooking for people with food allergies, intolerances, and special diets since 2004 and completed an intensive 6-month plant-based chef certification course from Rouxbe.com.
